Our organic duck will make a special occasion of a family meal. This variety of 'Pekin' duck has a perfect balance of fat resulting in evenly roasted, succulent and tender meat.
CHINESE STYLE MARINADE:
Rub the duck all over with marinade, I’ve made a simple one using sesame oil, a tablespoon of Chinese five spice, juice of a clementine and salt. I’ve also chopped in a little pickled ginger that a friend gave me though it’s not essential...
I’ll turn it a couple of times today and then roast it for around two hours, turning it each half hour as it roasts and spooning over the lovely juices... we’ll make and steam some pancakes layering them with a little oil so they don’t stick together ... and serve with freshly chopped cucumber, spring onion and more pickled ginger with fresh soy or hoisin for dipping ... just the fortune cookies to find now!
