Cut wedges of orange (or lemon) then trim away the peel and pith to give approx. 5mm thickness, cut this into strips.
Put the peel into a pan and cover with cold water, bring to the boil and simmer for 5 minutes.
Drain and return the peel to the pan, recover with fresh water, bring to the boil and simmer again for 30 minutes.
Tip the peel into a sieve over a bowl reserving the cooking water this time.
Add 100g or sugar to each 100ml of water in a saucepan, return to gentle heat until the sugar has dissolved then add the peel and simmer for 30 minutes until the peel is translucent.
Leave to cool in the syrup.
Lift out of the syrup onto a rack to dry, using the oven on the lowest setting for 30 minutes.
Remove from the oven and sprinkle with sugar, leave to air dry for a further hour.
Dip in melted chocolate, wrap in bundles, perfect for sweet treat gifts.
