Kohl rabi, the swollen root of a brassica, delicious in a 'raw-slaw', roasted or cubed in a casserole. Popular in rustic Italian bean stews adding flavour complimented by tomatoes and beans or in a Scandic-style slaw, grated with a little mayonnaise and horseradish.
